And all thru the house…our warmest wishes for a happy Christmas Eve, which in our house means making a family favorite egg casserole for Christmas morning. So—I’ve posted the recipe below just as my mother wrote it (she never wrote recipes down, and when she told you one verbally, she always left something out). I don’t remember how I started making it for Christmas Day because she made it for New Year’s Day brunch. Nevertheless, here it is for whenever you need a very unfussy breakfast for a crowd. Breakfast Casserole

1 ½ pounds sausage meat

1 ½ teaspoon dry mustard

9 eggs

3 cups milk

12 slices white bread cubed (remove crust)

2 cups grated cheese

Cook sausage meat. Combine milk, eggs, mustard and beat with electric mixer. Add cheese, sausage, and bread. Refrigerate overnight. Bake in 350 degree oven for 45 minutes.
